Yesterday I made paneer and left it under pressure for 24 hours. Today it had nice firm cheese! I was even little surprised how easy it was to do, and how proper the result was. At first it didn’t separate properly, although I used juice of two limes, same amount I used last time and then it was enough for one liter of milk. Unfortunately those were my last two limes. What to do? I could have walked to nearest store to buy more limes, but instead I decided to try adding some red vinegar. And it worked like a charm! And so excited I was about this successful experiment, that I bough 2 more liter of milk, and new set of paneer is already under weight while writing this..

  I could have eaten the paneer as it was, but then I decided to make something out of it. After some consideration I came up with the idea of doing Palak Paneer, my old favorite Indian dish. Palak Paneer was the only Indian dish I knew before I came to India first time, at least, only one which name I could remember :). I never made it properly in Finland, because paneer is not available there. If I had known how easy it is to make, I would cooked so many paneer dishes there. Now I feel even little stupid that I never checked it out. And Palak Paneer is so easy to make as well, and tasty!
 I went to a store to buy three bunches of spinach, as I figured that would been enough. But guy selling those told me, that I should buy 5 bunches, as they have a discount, 12 rupees total. I said “nono, I only need 3”. But he insisted that I buy 5, as it is a good discount. Again I tried to tell that I don’t need so much. He told me I can take some herbs as well, but five bunch I should take. I told him that I have curry leaves, coriander leaves and spring onions already, I don’t want anything more, as I have a trouble using the old ones. Now he looked me like i was a idiot, I think he rolled his eyes, went and got me 2 more bunches, added even half a bunch more, and gave it to me. What could I do, i bough the bunches. I guess I will be eating spinach tomorrow as well :). And this is not the first time they sell me excess vegs in this store. Last time I wanted to buy maybe half a kilo of bananas, but then cute salesgirl told me that I should buy 2 kilos of bananas, as they are in a discount. I have never learn how to say no to cute girls, so next 3-4 days I ate bananas as breakfast, lunch and dinner..

Palak Paneer
  • 3 bunches of spinach (fresh and cleaned properly)
  • 100g paneer in cubes (or what you get from 1liter of milk)
  • 2 onions, chopped
  • 1 tbsp ginger-garlic paste
  • 1 tsp green chili sauce
  • 1-2 tbsp butter (don't miss this, without maybe healthier, but with so tasty!)
  • 1 tsp garam masala powder
  • 1 tsp cumin powder
  • black pepper powder
  • salt
  1. Boil spinach about 10min
  2. Make paste of spinach and some water, using blender
  3. Heat oil in pan, add onions and cumin powder
  4. After couple of minutes add ginger-garlic paste
  5. After minute or two add butter, paneer, garam masala, pepper and salt
  6. Cook couple of minutes, add spinach
  7. Cook five more minutes
  8. Serve with rice
