Yes, this is invented dish just to get rid of spinach before it gets bad :). Same way as my chives paneer to get rid of chives (ready tomorrow, I’m excited to get taste that). Many great dishes get invented this way, trying to get rid of leftovers. Maybe these are not one of those, but still good 🙂


Tomato-Spinach Masala
  • 1 bunch of spinach, chopped
  • 3 tomatoes, cubed
  • 1 carrot, sliced to small pieces
  • some curry leaves
  • 3cm of ginger, chopped
  • 1 green chili, chopped
  • masala paste
  • tomato puree
  • red chili powder
  • curd (optional)
  1. Heat oil in frying pan, high temperature
  2. Add carrot, curry leaves, chili powder, chili, ginger, spinach
  3. Fry couple of minutes
  4. Add tomatoes, masala paste, tomato puree and some water
  5. Cook 5-10 minutes, or until ready
  6. Serve with noodles and curd (I added curd, because I put too much chili powder 🙂
