South-western-style salad

Ingredients
  • 2 sweetcorn
  • 400g black beans, drained and rinsed
  • 1 avocado, cut into chunks
  • 200g cherry tomatoes, halved
  • 4 spring onions, roughly chopped
  • 100g feta cheese, crumbled
  • DRESSING:
  • 1 tsp jeera
  • 1 tbsp chipotle Tabasco sauce
  • Juice and zest of 2 limes
  • 1 tbsp sherry vinegar
  • 2 tbsp extra-virgin olive oil
Instructions
  1. Boil the corn for 10 minutes in salted water
  2. Rinse in cold water
  3. Cut the kernels off
  4. Mix the dressing ingredients
  5. Mix all the salad ingredients
  6. Pour the dressing on top of the salad
