As I had a flu I had to make some soup (I have believe that you always have to eat soup when sick). As my nearest store didn’t have good tomatoes or canned tomatoes at all, I decided to make a mushroom soup.

Mushroom soup
  • about 1 dl of dried mushrooms
  • 5cm piece of leek, sliced
  • 1 tbsp of butter
  • 2 tbsp of wheat flour
  • 4 dl of water
  • 1 tbsp of vegetable bouillon powder
  • 2 dl of cooking cream
  • salt & pepper
  • some dried chervil (or some other herbs)
  1. Soak mushrooms to cold water for 30 minutes or so
  2. Strain the mushrooms, but save the water for later use
  3. Heat the butter in sauce pan
  4. Add mushrooms, fry couple of minutes
  5. Add leek, fry some 5 minutes
  6. Add water (now use the water used for soaking) and flour and rest of the ingredients, stir the soup while heating
  7. Let the soup boil couple of minutes
  8. Remove from the heat, add lid and set aside for 5 minutes
  9. Serve with white bread
