I had one big mango left from my Mango ripening test. I wanted to prepare something out of it. Then I remembered one super tasty Mango-Habanero sauce I have tastes some year or two again. I wanted to achieve something similar. Also, I wanted to make some use of my Naga Morich’s. So, what else to do than:

Mango-Naga sauce
  • 2 tbls oil
  • 1 ripe,juicy mango
  • half of onion, chopped
  • half of carrot, chopped
  • some pieces of celery, chopped
  • small sliceof Naga Morich, chopped as small as you can
  • some vinegar
  • 1 tbsp tomato puree
  • 1 tbsp honey
  1. Scoop out the mango fruit and juice and place it in a bowl
  2. Heat oil, add onion, carrot, celery and chilies. Cook 10 minutes, until onion is translucent.
  3. Add vinegar, mango, tomato puree and honey. Reduce heat to medium.
  4. Bring to simmer and cook about 35 minutes
  5. Remove from heat, paste with food processor.
  6. Store in the refridgerator.
