I have found a perfect spread on top of the bread: hummus! I will never, never, never get tired of it 🙂 If I get, I will mix the recipe a little bit, and again I have something new and exiting to put on top of my bread. It is simple to make, you can use your imagination and use new or left over vegetables, and it is a good source of protein. To get some idea, here is a wonderful link my new flat mate shared with me:

The Definitive Guide to Homemade Hummus

Here is one version (pretty basic version):

  • 1 can of chickpeas
  • some olive oil
  • lemon juice
  • 1 small clove of garlic, or half of bigger one (trust me, don't put too much)
  • 2 tsp of tahini
  1. Add ingredients to a food processor, and small amount of liquid from the chickpea can.
  2. Process it, add some more oil or chickpea water if not happy with the texture and process again. Store in fridge.
Basic recipe with half a tomato added.
Half of the chickpeas has been replaced with frozen peas.
