Feta-Potato Salad
  • 6 big potatoes, washed and sliced (no need to peel)
  • 1 sweet onion, sliced as thin as you can
  • ⅔ or a cucumber, sliced to half moons
  • bunch of rucola
  • 1 can of sun dried tomatoes, cut in half if you like
  • 1 packet of feta, cut in cubes (or break into pieces with your fingers)
  • 1 jar of kalamata olives, seeds removed
  • olive oil
  • ground black pepper
  • balsamic vinegar
  1. Preheat oven to 200C
  2. Put potatoes on a oven try, add olive oil and pepper
  3. While waiting for oven, mix all the other ingredient in a salad bowl
  4. Fry potatoes in the oven until they get nice brown color
  5. Let potatoes cool and then mix in to the salad
  6. Taste. Add salt and pepper if needed.
