Time to be vegan for one full month again, which means more cooking.. The first dish of the month was shepherd’s pie and the original recipe can be found here. This was a nice simple dish, and it took me four days to finish this, so the amount is good if you are single and lazy 😉

Shepherd's Pie
  • lots of vegan margarine (dark blue Keiju for example)
  • 2 onions, chopped
  • 2 big cloves of garlic, chopped
  • 2 large carrots, chopped
  • 2 sticks of celery, chopped
  • 4 dl green lentils, rinsed
  • 1 kg potatoes
  • 2 tl thyme
  • 2 bay leaves
  • 2 vegetable bouillon cubes
  • 7 dl of water
  • 2 tbsp soy sauce
  • 2,5 dl oat cream
  • salt
  1. Boil the potatoes in salt water, smash them with some of the boil water, oat cream, margarine and salt.
  2. While waiting for the potato water to boil, melt margarine on frying pan.
  3. Add onions and fry for couple of minutes.
  4. Add rest of the vegetables and fry for ten minutes or so.
  5. Add lentils, bay spices, part of the water, bouillon cubes and soy sauce.
  6. Let boil until lentils are soft. Add water in parts to avoid excess water.
  7. Put lentils in casserole, cover with mashed potatoes.
  8. Bake in oven for 30 minutes in 200 C.
