Bean-Potato Salad
 
Ingredients
  • SALAD:
  • about half a kilo potatoes
  • 100 g green beans
  • 1 can of kidney beans
  • small jar of small caper
  • 1 red onion, sliced thin
  • 1 bunch of rucola salad
  • oil for frying
  • DRESSING:
  • 0,5 dl olive oil
  • 1 tbsp lemon juice
  • 0,5 tbsp balsamic vinegar
  • 0,25 dl mild mustard
  • 0,5 tsp salt
  • 0,5 tsp sugar
  • ground black pepper
Instructions
  1. Boil potatoes and cube them when they are cooled down.
  2. Fry green beans while waiting, use high heat and fry for couple of minutes only.
  3. Mix salad ingredients.
  4. Prepare dressing and mix with the salad.
