I figured now it’s time again to eat something else than vegan pulled porkΒ πŸ™‚ I ate it for three or four days, but enough is enough. For this recipe, a friend of mine tipped that smetana would fit well here. Of course I had to try and she was right! This was the best potato salad I have tested so far! No wonder, it has avocados as well πŸ˜›

Recipe for vegan smetana.

Avocado-Potato Salad
 
Ingredients
  • 4 medium sized potatoes, boiled, peeled and cubed
  • 2 ripe avocados
  • about 100 g green beans
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 dl vegan smetana
  • 1-2 tsp salt
  • 2 tbsp capers
  • half a onion, chopped
Instructions
  1. Mash avocados in a large bowl, mix in olive oil, lemon juice, smetana, salt
  2. Mix in capers, onions, beans and potatoes.
