Vegan Herring sounded so stupid, yet quite interesting, so I just had to try it. And besides the name, not bad at all!

Vegan Aubergine Herring
  • 1 aubergine, cut to long thick slices
  • 2 dl oat cream
  • 3 tbsp vegan mayo
  • 3 tbsp mustard
  • white vinegar
  • fresh dill
  • half a red onion, chopped to small
  • white pepper
  • salt
  1. Boil aubergine slices for five minutes or so in salted water, they shouldn't get too soft
  2. Drain slices and let them cool down, add some salt
  3. Mix all the ingredients
