I have always wanted to taste worcestershire sauce, but it contains fish. I know there are some vegan alternatives, and I checked if vegekauppa has any on their selection, as we are planning to place an order anyway. While searching I started to wonder why not try to do it by myself, I bet there are tons of recipes on the Internet. So, here is one more, my variation of Martha Stewart’s Worcestershire.

I have to say that the end result was maybe a bit too sweet, as I added some sugar in the end to try to make the sauce thicker (which was unnecessary, the key was just to wait until the excess liquid evaporated). Although I don’t know how sweet it is supposed to be, as I have never taster worcestershire, so I don’t have anything to compare with. Edit: the sauce got same review in vegan sausage experiment: a bit too sweet.

Anyway, in the end I got some tasty nice brown sticky spicy sauce, and I don’t have any idea what to with it. Maybe eat it with some seitan?

Ingredients
  • 2 dl vinegar (väkiviinietikka)
  • 3 dl water
  • 1 dl soy sauce
  • ½ dl sugar
  • 1 cm piece of ginger, chopped
  • 1 tsp mustard powder
  • 2 tsp dried onions
  • 1 clove garlic, crushed
  • ½ tsp cinnamon
  • 1 tsp black pepper
Instructions
  1. Mix all ingredients in saucepan.
  2. Bring to boil and let simmer about 20 minutes (until you get nice thick sauce)
  3. Strain and bottle, let it cool down before using
  4. Stays good up to 3 months when refrigerated
