Aaloor Dam

  • 500 g small potatoes, peeled and boiled
  • 5 cm of ginger, chopped
  • 4 tomatoes, chopped
  • 2 tbsp mustard oil (Original recipe had 4)
  • 2 cardamoms (Original mentioned green, I don't know whats the difference)
  • 2 green chilies, finely shopped (2 dry red ones)
  • 2 bay leaves
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • ½ tsp cumin powder
  • a pinch of asafoetida
  • salt
  1. Heat oil in pan. Fry potatoes for a minute and keep aside. (I feel I could fried them little bit longer)
  2. In the same oil, mix all spices and saute for 2mins
  3. Add tomatoes and potatoes, stir and fry for 4 minutes on low heat. (My tomatoes were big cubes, so I feel couple of more minutes here wouldn't been hurt)
